Absolute musts in Beaune

The visits not to be missed during a stay at the Hostellerie Cèdre & Spa!

The market

A weekly appointment for the locals, the market offers genuine charm. No trailers or rotisserie trucks here, but the obligation to set up a classic stall with a table and sunshade. So a very fine market with a medieval ambiance, where you will find some 180 stall-holders (meat, poultry, fruit and vegetables, cheese, spices etc.). Organic products and produce from small nearby farms are also on display, everything to satisfy fans of local production!

Place de la Halle, every saturday.

L’Hôtel-Dieu, the Hospices de Beaune

L’Hôtel-Dieu de Beaune, usually called the Hospices de Beaune, is known worldwide for its remarkable and sumptuous architecture in traditional Burgundy style, and its prestigious vineyard estate whose production has long been sold at an auction to finance its operation, known as the "Vente des Hospices de Beaune".

Founded in 1441 by Nicolas Rolin, Chancellor of the Dukes of Burgundy, and his wife Guigone de Salins, this hospital fondation created for the very poor offers a flamboyant Gothic style with a roof made of glazed Burgundy tiles, iconic of the region. Functioning until the 1960's, a listed Historic Monument since 1862, it is now a museum of medical history exhibiting, among other things, the polyptych Le Jugement dernier by Rogier van der Weyden.

Held each year in November, the great auction of prestigious wines at the Hospices de Beaune gives rise to a weekend of festivities in Beaune.

The Moutarderie Fallot

Since 1840, the prestigious Moutarderie Fallot has preserved know-how in the craft of mustard-making. Until the Second World War, mustard seeds were in fact cultivated in Burgundy, in woods and clearings used for burning charcoal. This activity has since disappeared and, with it, the crushing of seeds on a millstone, which conserves all the paste's gustatory qualities.

Supplier to great chefs, the Moutarderie Fallot now works with the "Association Moutarde de Bourgogne" on a programme to relaunch the cultivation of mustard seeds in Burgundy and to create an "Indication géographique protégée" called "La Moutarde de Bourgogne". Offering different colours and fragrances (blackcurrant, tarragon, gingerbread, basil…), many hot delicacies are to be discovered and tasted in the boutique in Beaune.
